Guest Chef Dinner: Shirley Chung


Embark upon a culinary journey from Italy to China for a Marco Polo-inspired dining experience. “Top Chef” alumna Chef Shirley Chung will join B&B Hospitality Group’s Zach Allen for a six-course dinner featuring Asia-inspired comfort food including scallion pancakes and duck wonton alongside traditional Italian dishes such as beef carpaccio.

First Course
Scallion Pancakes with hazelnut and parsley pesto 
Carta di Musica with whipped ricotta, bottarga and cracked black pepper
Beef Heart Spiedini 
Meat Board Cured Italian and Chinese meats with pickled vegetables, bresaola, lingua, shank, tendon and salumi cotto

Second Course
Beef Carpaccio Sweet garum, long peppercorn, coriander and mandarin

Third Course
Ocean Trout Chinkiang vinegar brodo, braised celery, smoked trout roe and crispy garlic

Fourth Course
Beijing Duck Wonton Duck skin chicharron, radish, cucumbers, scallion, preserved vegetable and duck sauce

Fifth Course
Huang Jiou and Averna Glazed Short Rib Saba braised daikon radish
